Eggs in a hole are usually made with bread. A hole is cut in the bread, then the egg cracked into the hole and cooked.
This is super easy, healthy, light breakfast - low carb and keto-friendly too! While this is super cute, do not be intimidated by it ….these are super easy to make. It only takes about 10-15 minutes to make and the hardest part is cutting the pepper!
Bell Pepper Eggs in a Hole
A few tips:
Use a round, wide bell pepper instead of a narrow tall one to keep the egg contained in the pepper.
Cut from the center of the pepper first, making rings about ½ inch wide
If you want your egg yolk completely set, use a lid to help steam the egg over low heat.
Crack eggs into separate bowls for each pepper. Then pour into pepper from the bowl.
1 large bell pepper
4 eggs (or enough for the number of pepper rounds)
1 tablespoon coconut oil
Slice bell pepper into rings and remove the seeds and flesh.
Heat oil in a non-stick frying pan.
Add the sliced peppers and cook over medium heat until beginning to brown.
Using tongs, carefully flip the peppers.
Pour each egg into the center of each pepper round, use a fork or spoon to spread the egg around the pepper ring.
Season with salt, pepper and any other seasonings you wish. I used truffle salt for mine and some Everything But The Bagel seasoning.
