There are a lot of grain free chocolate chip cookie recipes out there but this is hands down my favorite - gluten free, grain free, dairy free - paleo friendly with a vegan friendly option, they are a delicious feel good cookie!

Grain Free Dairy Free Chewy Chocolate Chip Cookies
Note: don’t skip the step of refrigerating the dough, it’s a big reason why they have such a chewy yummy texture!
⅓ cup melted coconut oil
2 eggs or flax eggs
2 teaspoons vanilla
2 tablespoons arrowroot powder
2 cups almond flour
½ cup coconut sugar
½ teaspoon ground cinnamon
½ teaspoon sea salt
¾ teaspoon baking soda
1 cup dairy free dark chocolate chunks
Preheat oven to 350 F.
Line a baking sheet with parchment paper or silicone liner.
Let the coconut oil cool.
Combine the eggs, coconut oil, coconut sugar and vanilla in a medium sized bowl.
Mix with a hand mixer or whisk until thick and creamy.
Stir in the almond flour, cinnamon, salt, and baking soda.
Fold in the chocolate chunks.
Refrigerate dough for at least 30 minutes.
Scoop onto cookie sheet and bake for 10-12 minutes until edges begin to brown.
Don’t worry if they look soft coming out of the oven, they will settle as they cool, giving them the perfect chewy texture!
Sprinkle with flaky sea salt for added yumminess!
