These parfaits would be great for breakfast and it would also be a good snack to take on the go! The fresh berries are the perfect balance of sweet and refreshing.
Red White and Blue Berry Parfait
Layers of vegan coconut whip cream, fresh fruit, and grain free pretzel granola.
1 can full fat coconut milk
1 teaspoon vanilla extract
1 tablespoon raw honey (the thick kind) or maple syrup
1 cup fresh blueberries
½ cup sliced fresh strawberries
½ cup fresh raspberries
To Make Coconut Whip Cream:
Place coconut milk can in the fridge overnight. This will help separate the liquid from the cream, leaving you with half can of cream and half can of water. When you are ready to make the whip cream, open the can and dispose of the water portion.
Refrigerate a small mixing bowl for 30 minutes or so before adding in the coconut cream. Scoop out the cream and add to a mixing bowl.
Using a hand held mixer, on high, cream the coconut cream for a few minutes.
Then add the vanilla extract and maple syrup or honey. Beat again until fully incorporated.
To assemble parfaits, add a spoonful of coconut cream to the bottom of the glasses. Add a layer of fruit on top of the cream, then a scoop of granola. Repeat the layers until your glass is full. Store in fridge for 2-3 days.
